By Christabelle

I have been having a love affair with the Tar-jay for a number of years now. I will admit it, my name is Christabelle and I am a full-on, certifiable Target fanatic! The obsession started off slowly. First some low-cost office and bath supplies – then some fabulous SWELL sheets back in the day…then I found my absolute favorite bathing suit and long sleeve shirts sold there – and then…I fell madly and deeply (and forever more) when I checked out the prices in their grocery section and I have never looked back. Target is my go-to-store for anything and everything under the sun.

But today, I think my obsession hit an all time high, when I discovered Target recently partnered with Four Seasons chefs, Fred Mero, Pecko Zantilavevan and Patrick Lemblé, to create a special collection of delectable recipes at palate-pleasing prices – perfect for any occasion and perfect timing for me!  I am the guest chef for Christmas family dinner this year. And I am sure to WOW the entire Christabelle Clan with this mouth-watering flounder recipe…you saved the day, Tarjay!

PAN FRIED FLOUNDER ALMONDINE RECIPE

WITH LEMON PARMESAN BUTTER

What you need:
• 8 pieces Market Pantry Frozen Filets of Wild
Caught Flounder, thawed
• 1/2 cup flour
• 3 Tbsp. butter
• 2 Tbsp. olive oil
• 1/4 cup Market Pantry Slivered Almonds
• Juice from 1/2 lemon (about 1 Tbsp.)
• 1/4 tsp. grated lemon peel
• 1/4 cup grated Parmesan cheese
• 1 bag of Market Pantry Frozen Green Beans
What you do:
1. Place flour in a small bowl and season with plenty of salt
and pepper. Coat fish in flour mixture.
2. Melt 2 Tbsp. butter and olive oil together in a large
nonstick skillet over high heat. Cook fish in butter mixture
4 to 6 minutes, turning once or until golden brown.
Remove fish from pan and keep warm.
3. Add remaining butter and almonds to pan. Cook 2 to
3 minutes or just until almonds are toasted. Remove from
heat and stir lemon juice and peel. Drizzle over fish and
top with cheese.
Chef’s Tip: Prepare Market Pantry Frozen Green Beans to serve alongside the fish and drizzle with butter and almonds. Turn this family meal into a party fare by using Archer Farms Lemon Parmesan Butter.

Apres dinner…forget the cookies and cake for dessert – my holiday feast-fest will end with an alternative sugary delight (also, thanks to Target). Step away from the gingerbread man and the holiday fruit cake  and delve into a Merlot Candy Cane Cooler – yes, you heard me right. Did you just drool a little? It’s ok – me too!

With a simple twist of  Target Wine Cube Merlot, a splash of lemon-lime soda and ginger ale, a few stocking shaped ice cubes and a crushed candy cane rim of the glass – a Christmas cocktail is just minutes away from bringing holiday smiles to all who sip on it!
Serves: 2
8 oz. Target Wine Cube Merlot
4 oz. lemon-lime soda
4 oz. ginger ale
crushed candy canes
